Rotelle Pasta with Spicy Heirloom Tomato Sauce & Tofu “Feta”


I had a bunch of heirloom tomatoes to use, wanted to try making tofu “feta” and was craving pasta so this is what I came up with. Rotelle or Penne pasta was chosen because I wanted the feta to stick to the pasta. We love Arrabiatta sauce so I opted to make this spicy but you could easily leave out the cayenne. You will want to let the feta and tomatoes marinate for at least an hour.

Tofu “Feta”
7.5 oz sprouted extra firm tofu
1/2 tbsp nutritional yeast
1/2 tbsp miso
1/2 tbsp olive oil
1 tsp dry basil
1/2 tsp dried oregano
1/2 tsp garlic powder
1 tbsp balsamic vinegar
1/2 tbsp lemon juice

Put tofu in a bowl and crumble with a fork. Mix in remaining ingredients making sure they are well blended. Cover and let sit in fridge for at least an hour.

Marinated Heirloom Tomatoes
1 tbsp olive oil
1 large clove of garlic minced
1/4 cup diced onion
1/2 tsp raw sugar
2 lbs heirloom tomatoes diced
20 fresh basil leaves chopped
1/4 tsp salt
1 tbsp balsamic vinegar
1/2 tsp vegan Worcestershire sauce
1/2 tsp oregano

Saute garlic and onions in olive oil in a skillet over medium heat until onions are translucent and garlic is brown. Lower heat and stir in sugar. Cook for 5 minutes. Set aside so that it may cool down. Mix remaining ingredients. Add in onion mixture and let marinate for an hour.

Spicy Sauce
Marinated Heirloom Tomatoes (recipe above)
1 tbsp olive oil
6 oz tomato paste
3/4 cup water
1 tbsp nutritional yeast
1/2 tsp sugar
1/8 tsp ground cayenne

Drain tomatoes reserving liquid. In a large sauce pan over low heat cook oil, tomato paste, liquid reserved form heirloom tomatoes, and water. When it is just starting to boil add nutritional yeast, sugar, cayenne and tomatoes. Lower heat and let simmer for 30 minutes.

To Serve:
1 lb rotelle pasta cooked
Tomato sauce
Vegan meatless balls (optional)

Once pasta is cooked per directions on package put back in pot it was cooked in. Add 1/4 cup of tomato sauce and feta. Stir together. Serve pasta with more sauce over the top and meatless balls if you choose.
