Garbanzo Bean “Tuna” Salad

20110828-112201.jpgThis recipe is far from innovative. Just as you may find hundreds of recipes for tuna salad I’m sure you will be able to find a plethora of recipes for mock tuna salad. I have been working on it for awhile and I finally came up with one that I am satisfied with.

Ingredients:
15 oz canned garbanzo beans
1 green onion diced
1 stalk celery diced
1/2 cup vegan mayo
1/2 tsp Dijon mustard
1 tsp dill relish
1/4 tsp dried kelp
1/4 tsp dry dill
1/2 tsp lemon juice

Mash garbanzo beans with a fork in a bowl. Mix all other ingredients and serve. We served on bread with tomatoes and spinach. Serve as you wish. Will make 4 sandwiches
