One of the things I’ve missed the most in our vegan lifestyle has been Italian food. Let’s face it, next to French cuisine, Italian food has to be some of the most cheese & cream heavy fare there is. Over the years products have come on the market that have alleviated this problem, Parma brand vegan Parmesan satisfies my need to have something to dust my pasta with and there finally is a faux cheese that melts on pizza properly (but we won’t name them here ’cause they dissed our request to participate in our little give-away).
One thing that has been missing though is a good vegan Alfredo sauce. I had been missing it so much that I recently took a run at making my own cashew cream based sauce. While the results were quite edible is wasn’t anywhere near Alfredo sauce and certainly not blog worthy.
Enter the Two Vegan Ladies. Two Vegan Ladies are couple of bloggers & budding vegan entrepreneurs that were nice enough to send along a couple of packages of their Alfredo Sauce, one for a lucky winner of today’s give-away and one for the lucky D family to try for ourselves.
They nailed it. A simple dry mixture that you add to heated coconut milk, it is easy & quick to make and the flavor is out of this world. I followed the directions except to add frozen peas to the coconut milk as it heated. We used Alfredo to cover a saute of romanesco, asparagus & chig’gun strips on a bed of spaghetti squash. BTW- romanesco is a real word, I don’t know why the spell check doesn’t know that.
It’s important to note that you cannot taste to coconut at all and that really makes this product taste so great. (I like coconut btw, I just would not want an Alfredo to taste like it). I used only half the package and I am already thinking of what I want to try with it next.
