Apple Sage Sausage Mushroom Loaf

In a past post for MOFO I mentioned a website that I love called The Magical Loaf Studio where I have learned how to make the most amazing loaves. This time I felt I was ready to break away from the mold and try my own and I have to say it came out pretty tasty. The pecans gave it an extra rich flavor and the sausage gave it a really great texture. If you don’t have Field Roast available where you live you could use any other vegan sausage or possible even a veggie burger.

 

 

Ingredients:
8 oz mushrooms chopped
2 Field Roast Apple Sage sausages diced
1 rib celery diced
1 clove garlic pressed
1 tbsp olive oil
1/2 cup pecans
1/2 cup bread crumbs
1/2 cup oatmeal
2 tbsp flax meal
1/2 cup water

Preheat oven to 350 degrees.

Saute mushrooms, sausage, celery and garlic in olive oil until celery is soft. In a food processor grind pecans until they are a flour. Add mushroom mix and puree. Put puree in a bowl and mix in bread crumbs and oatmeal ( I found it easier to use my hands.) In a separate cup mix water and flax seed meal together. Mix flax mixture into other ingredients.  Form into the loaf shape of your choice (mine was a 6″ circle.) Bake for 45 minutes. Let cool for five minutes and serve with Mushroom sage gravy (recipe below.)

Mushroom Sage Gravy
1 tbsp vegan butter
8 oz mushrooms
1 green onion diced (green and white part)
1/4 tsp garlic powder
1/2 tsp sage
1 tbsp Braggs
3/4 cup water
1/3 cup cashew cream

Saute mushroom, onion, garlic powder and sage in butter for 10 minutes. Add Braggs and water and cook for 5 more minutes. Turn temperature to low and add cashew cream. Stir until well blended. Serve.
