As many of you know, here at Don’t Fear the Vegan we are trying really hard to get our stuff together for our own seitan company. Field Roast is a great role model for us. They started out small here in Seattle and have now grown and are a pretty common word in the veg community.
Our house favorites are their sausages, especially the Mexican Chipotle and Apple Sage. We have used these in a few recipes. Our favorite by far were the Mexican Chipotle Corn Dogs. This recipe goes back to the beginning of the blog and the pics are terrible but these were amazing!! Using the Apple Sage sausage we have made stuffing and a loaf. To celebrate today’s gift I decided to make potato skins (which I have been craving for a long while) featuring the Chipotle Sausage.
Ingredients:4 large russet potatoes – baked but still warm
vegan butter
1 tsp olive oil
2 Field Roast Chipotle Sausages – chopped
1 cup of your favorite vegan cheese shredded
toppings of choice: We used diced tomatoes, diced green onions and Paprika dip
Directions:
Preheat oven to 450 degrees.
Quarter potatoes lengthwise and scoop out center being careful not to break through the skin. On a cookie sheet, place the potatoes skin side up and lightly cover with butter. Bake 15 minutes, until crispy.
While potatoes are baking saute sausage in olive oil until browned and crispy. Remove from heat and set aside.
Remove potatoes from oven and lower temp to 400 degrees. Mix sausage and cheese together. Flip potatoes so skins are down and equally disperse sausage/cheese mixture. Bake for 5 more minutes. Remove from oven and add favorite toppings. Serve.
