Walnut Vinaigrette

Ever since making Creamy Better Than Ranch dressing from Uncooking 101 which I made for my R is for Raw post for Vegan Mofo I have been doing more reading on raw food preparation. Though I don’t think I will ever go completely raw (that’s what I originally said about going vegan) I would love to add a few raw meals to our weekly menu.

Inspired by the salad dressing above I decided to try my hand at creating my own and it came out really good. I am not sure that all the ingredients are raw and have not had a chance to check them out.  I went by what I thought would taste good. If you know for sure that one of them are not raw please educate me. Regardless, this dressing was really good and the combination of walnuts and nutritional yeast gave it a real cheesy creamy flavor. Hubby is planning to use the left over for a pasta salad. Think “Creamy Italian” without the cream, cheese or added oil.

Ingredients:
1/2 cup raw walnuts soaked for two hours
2 dates soaked for two hours
1 cup water
1/4 cup lemon juice (2 small lemons)
1/4 cup apple cider vinegar
1/4 cup balsamic vinegar
1 garlic clove
1 shallot
1 tbsp nutritional yeast
1 tsp agave
1 tsp dried oregano
1 tsp dried basil
1/4 tsp thyme
1/4 tsp ground black pepper
1/2 tsp vegan Worcestershire sauce

Blend walnuts, dates and water in blender and blend until creamy (took a minute on high in Vitamix.) Add remaining ingredients and run blender for thirty seconds. Refrigerate for at least an hour so flavors can blend.
