Celeriac Salad

Celeriac also known as celery root is often used for salads. You mcay have had something similar to this so forgive me if you find it to simple. I thought I would share it anydway bezcause I have never had it anywhere besides my grandma and moms kitchen or restaurants in Germany.

My grandma used the root raw but my mom prefers it boiled so that is how she taught me to make it. If you opt to use it raw you will want to add lemon to prevent it from discoloring.

Ingredients:
1 celeriac
1 sour apple finely diced
1/4 cup diced sweet onion
3 tbsp white vinegar
2 tbsp raw sugar
1/4 cup water
1/2 tsp dried parsley
1/8 tsp ground white pepper

Scrub celeriac skin and boil until you can easily poke a fork in it. Allow to cool and peel then chop (as you can see from the picture mine was not very uniform and mom wasn’t to happy about that.) in a separate bowl mix ingredients onion through pepper to make dressing. Mix dressing with celeriac and apples. Let marinate at least 3 hours. Serve cold.
