Vegan MOFO Day 4: Stir Fry and Forbidden Rice With a Not So Good Miso Soup

Everything that could make me run behind today got in my way. It is now 1 in the morning and I am finally getting to write my post for yesterday. Hey, I haven’t gone to bed so as far as I am concerned it is still Day 4!

So in this edition of Intervention of a Food Hoarder there are many elements. First off we tried a miso soup mix that was inedible for hubby, Anzia, and I. However the 21-year-old who is staying with us liked it.

Anzia loves forbidden rice and she was the one who got to go through the cupboards and freezer to pick the meal. I added in some fresh veggies that I needed to use up.ingr

Ingredients:
1 tbsp olive oil
1/2 cup raw slivered almonds
8 mushrooms sliced
1 bell pepper sliced
1 package Asian Stir fry with Beijing Style Sauce (Trader Joe’s)
2 cups organic foursome (a frozen veggie mix at Trader Joe’s with corn, peas, carrots, and green beans)

Saute almonds in olive oil for two minutes. Add mushrooms and bell pepper. Saute for five minutes. Add Asian stir fry and foursome and cook according to directions on stir fry package. We served over forbidden rice that I could according to package.

  1. Bummer about the miso – what was wrong with it? I’ve seen that brand online, but never in store so I haven’t tried it!

    it will be so exciting to have room in your freezer and pantry after all these meals! other than the miso, it sounds like a pretty good dinner!
