While at my parents this week, we all had what my dad calls the ‘xactly’s, meaning we all felt exactly like crap. I was making tacos for dinner with my Raw Walnut and Sunflower Seed Taco recipe and decided to make a salad with a bunch of immunity boosting ingredients. It came out super tasty so I thought I would share.

*I am not a ginger fan, but know it is good for me so I added it and felt the amount was perfect. My mom and sister, who love ginger thought it could have used more. I recommend you add per your taste.
*I would have preferred a bit more cayenne but my mom and sister don’t do spice well so I kept the amount on the lower side. Again, add according to your taste.
1 large beet, peeled and grated
2 ataulfo mangos, peeled and diced
juice of one lime
1/4 cup chopped cilantro
1/4 inch fresh ginger peeled and grated
1/8 tsp cayenne
1 clove garlic pressed
1 green onion diced
1 tbsp apple cider vinegar
Mixed all ingredients together. Let sit for at least a half hour. Enjoy.
