Raw Reuben Unsandwich

As a meat eater I had loved Reuben sandwiches. I now love a vegan Reuben. So why when given the opportunity to create a raw meal entrée (thanks Uncooking 101 for the inspiration) wouldn’t I try to make a Reuben? Had I gotten my stuff together quicker and wasn’t scared of my dehydrator, that is still sitting in the box, I would have attempted to make a raw bread or cracker to accompany this dish. Maybe that will be my next personal challenge.

This dish came out so good! Hubby who also loves Reuben’s went back for seconds. Even though it is a raw fail, he is considering trying all the ingredients on some rye bread to make a sandwich. Hey, he technically didn’t sign up for the raw thing, he is simply eating it by default. Though, honestly, I may have to sneak a bite of that sandwich!

If you use Gluten-free tamari all recipes are Gluten-free!

Recipes as pictured from top to bottom:

Two Cabbage Slaw
1/2 head small red cabbage shredded
1/2 head small green cabbage shredded
2 carrots shredded
2 green onions diced
3 tbsp apple cider vinegar
2 lemons juiced
1 clove garlic
2 dates
1/4 cup cashew cream
1/2 tsp caraway seeds
1/4 tsp mustard powder
1/4 tsp ground black pepper

Mix cabbages, carrots and onions in a bowl.
In a blender add all remaining ingredients and mix until it becomes a liquid. Pour over cabbage mixture and fold in until well blended. Cover and refrigerate until ready to use. I recommend letting it marinate at least a couple of hours.

“Cheesy Cauliflower”
Okay, from what I have read Nutritional Yeast is technically not raw but it seems as though many raw foodist eat it.

1 head of cauliflower grated (or put in food processor and pulse until rice like consistency)
juice of one lemon
1 tbsp tamari
1 tbsp white miso
2 tbsp nutritional yeast

Mix juice, tamari, miso and nutritional yeast with a fork so it is well blended. Put cauliflower in large bowl, pour in lemon mixture and stir until well blended.

Corned Walnut and Pecan Pate
1 cup raw walnuts (soaked 2 hours)
1/4 raw pecans (soaked 2 hours)
1 small shallot
1 clove garlic
1/2 orange bell pepper
1/8 tsp clove powder
1/4 tsp allspice
1/8 tsp cinnamon
1/4 tsp mustard powder
1/4 tsp ground pepper
2 tbsp apple cider vinegar
1/2 tsp sea salt
1 tbsp tamari
1/4 cup water

It’s a lot of ingredients but super easy! Drain nuts and put them in food processor with an S blade. Add all other ingredients. Turn on processor stopping every 30 seconds or so to scrape the sides. Continue to process until it becomes a paste.

To plate:

Shape pate on plate. With hands shape cauliflower into a ball and set on top of pate. Spoon slaw over top to get desired effect.
