Still unpacking tonight so we took a family favorite and twisted it up a bit. No new recipe, but instead an old recipe presented in a new way. The Brazil Nut Tuna worked perfectly stuffed in the heirloom tomato. It made me think that if I wasn’t allergic to avocados, I would really like the tuna stuffed in one.
Hubby had the great idea of adding the Savory Smokey Pecan and Sprouted Chick Pea Snacks. So delicious!
Ingredients:
Brazil Nut Tuna Recipe
1 lb tomatoes
spinach leaves
Savory Smokey Pecan and Chick Pea Snacks
Directions:
Cut the top off the tomato. Clean out seeds. Stuff with tuna. Serve on a bed of spinach.
Ooh what a great way to enjoy the last tomatoes of summer!
