Pecan, Tomato, Onion Dip

Over the weekend we hosted a kids dance party which was the perfect opportunity to try out some new recipes along with making some of our old favorites like Anzia’s Paprika Dip and Yogurt Paprika Dip. When kids of all age are involved you must also have cookies so we made Pudding Cookies and Blackberry White Chocolate Lemon Drops. My family is addicted to the Smokey Pecans so I really wanted to figure out a way to incorporate them into a dip.

The pecans have a smokey flavor reminiscent of bacon and we use them for mock BLT’s so I began to search the internet for a BLT dip. Of course this dip already existed with a dozen different recipes to read. I did a combination of the many things I read and created this dip which was the hit of the party. I recommend making a couple of hours ahead so the flavors have time to blend.

Ingredients:
1 cup of Smokey Pecans or use your favorite vegan bacon bits
1 cup diced tomatoes
3 green onions diced
1 cup vegan mayo
1 cup vegan sour cream

Remove 1 tbsp pecans, tomatoes and green onions, mix together and set aside to put on top.

Mix all remaining ingredients together. Put the mix you put aside on top. Refrigerate for a minimum of 30 minutes though 2 hours is preferred. Serve with chips or veggies.
