Roasted Potatoes Cajun Style

Until making the Cajun loaf I had never made anything I would consider Cajun before. The original loaf recipe sounded interesting and I wanted to continue with the theme so I did a search for Cajun Style potato recipes. More than a handful came up and after reading them all, I came up with my own recipe.

I have to say they might be my new favorite way of cooking a potato. My family is German/Scottish and we know about cooking potatoes but these were something special. The combo of the oil and seasonings made them taste like a guilty pleasure but they actually are made with pretty decent ingredients. Super easy too. Just chop up the ingredients, mix them together, throw in the oven and walk away. Oh yeah, you will need to come back half way through to stir them up.

Ingredients:
2 lbs new potatoes cut in half
1 cup diced yellow, red or orange bell pepper
1 tbsp olive oil
1 large shallot diced
1 tsp salt
1 tsp smoked paprika
1 med clove garlic pressed
2 sprigs fresh thyme I used the leaves only
1/4 tsp cayenne

Preheat oven to 400 degrees.

In a casserole dish mix all ingredient. Bake for 1 hour stirring half way through. I seriously could eat the entire dish myself but as a side there is enough for four people to share!
