There are dozens of scrambled tofu recipes out there that taste great and fulfill that craving for eggs but I was having a hard time getting them to work on sandwiches. Recently I was playing around and came up with this recipe which I must say is most excellent. You accompany the sandwich with what ever you like. For the sandwich pictured the following was used:
Cheesy Spinach
vegan bacon
Eggy Tofu
Tomato
English Muffin
Vegan Mayo
Eggy Tofu:
1 package firm/super firm tofu
1/2 tbsp vegan butter
1/2 tsp onion powder
1/2 tsp garlic powder
1/8 tsp cumin
1/2 tsp tumeric
2 tbsp Braggs Amino acid
1 Tbsp Nutritional Yeast
1/4 cup water
slice package firm tofu
Melt butter in frying pan over medium heat. Cook tofu so it is golden on both sides. While cooking tofu mix remaining ingredients in a bowl. Once tofu is golden pour mixture into pan and make sure tofu is evenly coated. It is now ready to be served as you wish!
*If you use a wheat free butter source this would be Gluten Free.
