Yay! We had time today to put together the “BEST MESSIEST MOTHERFREAKIN’ SANDWICH EVER!” It was made of grilled tofu & rainbow carrots, sweet onions, jalapeño, heirloom tomato, and red cabbage slaw on a panini roll. This was a complete family effort and we made a fun little video for you to watch the steps. Click here.
Everything may be made ahead of time. The sandwich is good with all cold ingredients. The carrots will take longer than the tofu.
Here are the ingredients and directions:
Tofu
approximately 1 LB pressed tofu
2 tbsp nutritional yeast
1/2 cup tamari
2 tsp liquid smoke
1 tsp vegan worcestershire sauce
1 tsp maple syrup
Slice pressed tofu into quarto inch slices. Mix ingredients from nutritional yeast to syrup together. Pour over tofu slices. Marinade for a minimum of 2 hours. Then grill. You could also cook in oven or broiler until the edges are firm.
Roasted Carrots
2 rainbow carrots sliced thin length wise (you can use regular carrots)
1/2 cup olive oil
1/4 cup balsamic vinegar
1 tsp garlic powder
Mix oil, vinegar, and garlic powder together. Pour over sliced carrots and marinade for two hours. Grill until soft on the inside, crispy on the outside.You could also cook in oven or broiler until the edges are firm. Carrots will take longer than tofu so give them a five minute head start.
Coleslaw
1 small head of red cabbage shredded
Half a granny smith apple, peeled and shredded
1/8 tsp onion powder
1/4 tsp garlic powder
1/3 cup vegan mayo
1/4 apple cider vinegar
1/2 tsp salt
1 tsp sugar
Mix all ingredients together.
We layered our sandwich like this:
bottom of roll
sweet onion
tofu
heirloom tomato
carrots
jalapeño
coleslaw
top of roll
