DFV Tv is back with a new and improved episode, The Breakfast Show!  Steffi is joined by Salem based author of “The Glad Cow Cookbook” and vegan entrepreneur Summer Keightley, who prepares her Tofu Scramble recipe.  Be sure to visit and ‘Like” the Willametta’s Facebook page and follow them on instagram & twitter and other social media platforms.

Next up executive producer/producer/PA/director/cameraman/audio dude/lighting guy/grip/best boy/editor/music supervisor/runner/water boy and liaison to CCTV Felipe shows the viewers his easy take on White Chocolate Chip & Raspberry Pancakes.  Then the Young Vegan Anzia  shares her opinions on the ridiculous bacon craze currently sweeping the country.

Summer K.’s Tofu Scramble
2 Tbsp oil
1 lb. firm tofu, drained
2 tsp. salt
1 tsp onion powder
1 tsp. black pepper
1/2 tsp paprika
1/4 tsp tumeric
1/4 cup nutritional yeast

Optional ingredients:
Green Onions
Spinach
Mushrooms

Heat oil in a skillet.  Add grated tofu and ingredients except nutritional yeast.  Stir while cooking over medium heat.  Cook until all the liquid has evaporated the tofu is a texture of your liking, adding nutritional yeast near the end of cooking.

    Thank you for the recipe of scrambled tofu. I love eating it, and order it for breakfast at my favorite vegan café when we go out, but have been afraid to try it at home. I would love to win this book. I’m still learning how to cook vegan and this will help me on my journey

    Woo hoo! Reclaiming the cheese grater! What an awesome technique for tofu, especially since cutting tofu can be so messy and slimy. This cookbook looks wonderful!
