12 Days Give Away – Day 5

Alton Brown is notorious for his dislike of single purpose kitchen utensils.  There are a couple that he’ll allow into his kitchen but most are verboten.   I found only one recipe of his that used tofu, and he recommends balancing canned tomatoes on the brick for an hour (FYI – The recipe is not vegan). With all due respect Mr. Brown, I bow to your superior culinary knowledge, balancing anything on a brick of tofu for an hour is quite a feat. I say that as some one who has tried many, many times.

Being an omnivore Mr Brown probably doesn’t eat enough tofu to fully appreciate all the subtle nuances that a properly pressed block a tofu presents the chef or how it feels on the palate.  However if he knew there is a way to perfectly press tofu and do so in less, much less, than an hour, he might be persuaded to add today’s gift to his kitchen.

    OMG! I’ve been wanting one of these for so long. I don’t eat alot of tofu because I can never get it the right texture, this would certainly help me get all that moisture out and finally get the right texture. Great gift!!

      Hey Deanne, one tip you may have already tried for the texture would be to freeze your tofu in ziploc baggies once you’ve drained and cubed it. WHen you defrost it you can squeeze the hell out of it with your hands while it’s still in the baggie, to get the rest of the water out, and it’s much firmer and won’t mush. We also have only done this with Extra Firm tofu. Works like a charm though. 🙂

    I’ve wanted one of these for so long. I remember commenting on your last post about them (was that really a year ago?). End after all these years, my pressed tofu still.comes out all crooked when I press it with a skillet and some cans of beans!

    We need one of these! We usually use our cast iron skillet, but that makes for some lopsided tofu!

    Once I was using my small saucepan as part of the apparatus to press tofu. It now has a bent rim from hitting the floor when the tofu went wonky on one side! I would use this press all the time.

    Being on opposing schedules as my husband makes it really hard to choose easy dinners after long hours of work. This would help to cut prep time and get food into our bellies quicker. I’d use it often.

    I have wanted one of these so badly since I first saw you mention it last spring. I do manage “well enough” with my cast iron skillet. I adore tofu…in all it’s variety of textures. It’s hard to fathom that there was a time I was afraid of it…lol.

    I would love this! I love tofu! I am too impatient to wait that long for tofu to drain, and it is always such a hassle. I eat out to often; this might encourage me to stay home and eat more tofu!
