5 Things To Do With Lychees

lycheeeFresh lychees are available in the stores now. I hear you may buy them at asian markets or if you have a Trader Joe’s close by, they are stocking them. I bought mine at Trader Joe’s and as is often the problem there, you have to buy a package of them. My whole point of buying them was so the family could try them but I figured I had quite a few to use up so I began looking for recipes.

If you are unfamiliar with lychees check out a great post on The Indian Vegan titled All About Lychee. My original plan was to do something similar but after stumbling across Catherin Reddy’s blog I knew I couldn’t do it better!

After searching vegan blogs for a couple of hours I realized I was going to have to settle for can lychees in some of the recipes, which I don’t mind, it just doesn’t give me many options for the freshies I have sitting on my counter.
