This weekend I remade one of my personal favorites as well as one of Don’t Fear the Vegans most popular recipes to date, Indian Potato Salad. While making it I realized that I very rarely liked traditional potato salad for I often found it too dry. I also started wondering what other creative ways people have found to make it. There were some delicious looking ones and I had to share. If you have a favorite recipe, please share!

These recipes look interesting. Must try one of them next time potatoes are on the menu. Since going vegan, the hard-boiled eggs are out (though, i’d love to hear if anyone has a vegan substitute for them), this leaves our usual to consist of mayo, diced raw onion, thinly sliced radishes, yellow mustard, salt and pepper.
My grandmother used to add whatever leftovers she had in the fridge, which made for some rather interesting salads (corn kernels, and peas)…
It depends on what you like about the hard-boiled eggs, but extra-firm Mori-Nu tofu has a texture very much like egg whites, and Indian black salt (kala namak) tastes uncannily like egg yolk, with its high sulfur content.
Thank you so much! I’ve just searched Amazon for the indian black salt, as the yolk taste was what I missed most, and the reviews tell me just what I needed…ordering some, pronto!
Glad to help! I hope it gives you the effect you’re going for. I made eggs goldenrod with it once, and it took me right back to childhood (though I did miss pushing the yolk through the strainer as the finishing touch).
I have black sea salt in my cupboard. I really need to try it out!
