At any given time you could open the Don’t Fear the Vegan fridge and find the Tofurky hickory deli slices and their Italian sausage, though oddly enough there are very few recipes on the blog which include Tofurky products. Hubby and I were talking and decided that it was due to the fact that they were our go to foods when we didn’t have the time or energy to cook. Regardless, I decided to make a new recipe just for the occasion.
Need an appetizer for a holiday party? This would be perfect. Extremely easy to make and it looks festive. Plus the rolls tasted great!
This recipe will make 20 rolls.
Ingredients:
2 lavash wraps
2 Tofurky Italian sausages
1 tbsp olive oil
1/4 cup diced red onion
2 small cloves garlic
1/3 cup diced sun-dried tomatoes (packed in olive oil)
1 tbsp nutritional yeast
1 tbsp balsamic vinegar
1 10 oz package of your favorite hummus (I used spicy red pepper)
40 basil leaves
Directions:
Saute onions and garlic in olive oil until onions are translucent. Add Italian sausage and sun-dried tomatoes. Cook until sausage just begins to brown.
Put sausage mixture and all remaining ingredients (except lavash and basil) into a food processor and pulse until well combined and crumbly. Refrigerate for at least an hour.
Divide mixture in half and spread out on lavash rolls with a spatula. Top with basil leaves. Roll from wider side for smaller rolls which is what I did or the opposite way if you would like larger but less rolls. Cut in 1″ slices. Serve.

Just saw your Tofurkey reference in a side ad on FB, I really like Tofurkey and have become very fond of the roast. I make one each for Thanksgiving and Christmas and of course several more times a year. The last one was cooked in an oven bag with buffalo sauce, potatoes, carrots and mushrooms…Awesome, Im doing that one again for Christmas!
